This is a variation of my previous post on
steamed eggplant with minced pork.
Ingredients1 medium sized eggplant, cut into thin slices
150g minced pork, marinated with soy sauce and corn flour
2 cloves garlic, finely chopped
1 tsp bean paste
1 tbsp soy sauce
1 tbsp Shaoxing wine
1 tsp sugar
Olive oil
Water
MethodHeat olive oil in wok/pan and fry eggplant till soft. Push eggplant aside, saute garlic and minced pork. Add bean paste, soy sauce, wine, sugar and some water. Mix all ingredients well, and stir fry for another 3-5 minutes.
Dish and serve.
