Steamed chicken with ginger, garlic and spicy blackbean sauce 蒜姜茸豆豉蒸鸡

The title pretty much tells all. This dish is easy to make and can be prepared well in advance. 15 minutes is all you need for steaming the chicken.

Ingredients
Half a chicken – cut into pieces

Marinade
Garlic – 4 cloves, finely minced
Ginger – 1 piece, finely minced
Spicy blackbean sauce – 5 tbs
Sugar – 1 tsp
Chinese Shao Xing wine – 2 tbs

Method
Wash and cut chicken into pieces. Mix minced garlic, minced ginger, spicy blackbean sauce, sugar and Shao Xing wine to make a marinade for the chicken.

Marinade the chicken for at least an hour.


Steam chicken for 15 minutes over medium high heat.

Dish and serve.

Note:
- Salt is omitted as the blackbean sauce has soy sauce in it.

- The spicy blackbean sauce contains some chili paste. If you like your dish spicy hot, you may add more chili and stir fry with the black bean sauce before using it as a marinade.
