Stir-fried Asparagus with Pork Slices 芦笋炒肉片


Ingredients
2 bunches asparagus
200g pork fillet, sliced & marinated with soya sauce & corn flour
2 cloves garlic, finely chopped
1 small piece ginger, finely chopped
2 tbsp Mirin
1 tbsp Teriyaki sauce
Oil for cooking
Water


Method
Trim and discard the fibrous ends of the asparagus. Cut the stalks at a slanted 45 degree angle into 1 and a half inch lengths. Add 1 tsp oil and some salt to boiling water, blach asparagus for about 30 seconds to a minute. Drain.

Heat oil in a frying pan and saute ginger till fragrant. Add pork slices and stir-fry until brown. Add Mirin to pork and stir-fry briefly. Push pork to one side. Heat oil in the centre of pan and saute garlic till fragrant. Add asparagus along with Teriyaki sauce. Stir fry asparagus and pork until all ingredients are coated with sauce. Add some water if it gets too dry.

Dish and serve hot.
