Ingredients
500g fresh Hokkien noodles
100g pork, thinly sliced and marinated with soy sauce and corn flour
50 calamari, thinly sliced
3-4 cloves garlic, finely chopped
3-4 bunches choy sum, cut into sections
1 tbsp light soy sauce
1 tbsp dark soy sauce
2 tbsp Chinese rice wine
1 tsp fish sauce
1 tsp sesame oil
2 tbsp cooking oil
Salt to taste
Corn starch mixture
Water

Method
Heat some oil in wok and saute some garlic till fragrant. Stir-fry pork slices and calamari till cooked. Remove and set aside.

In the same wok, heat remaining oil and saute the rest of the chopped garlic. Add noodles and stir-fry briefly. Add water till it covers the noodles. Splash in sauces and seasoning. Mix well and allow the noodles to simmer. Stir in some corn starch mixture to thicken the sauce.

Add choy sum to noodles, return pork slices and calamari. Stir-fry for additional 2-3 minutes till evenly mixed.
