Ingredients
400g chicken pieces
1 small piece ginger, sliced
3 tbsp sesame oil
3 tbsp rice wine
1 tbsp dark soy sauce
Salt to taste
Corn flour mixture
Water

Method
Marinate chicken with 1 tbsp rice wine, 1 tbsp sesame oil and some salt for about an hour.
Heat sesame oil in wok and saute ginger till brown and fragrant. Add chicken and stir fry for 2 to 3 minutes till the skin is slightly browned. Add water, seasoning and simmer chicken over low fire until the meat is tender, about 20-30 minutes. Thicken the gravy by adding some cornflour mixture.
Dish and serve.
