Soy Sauce Chicken 醬油雞
Ingredients
1 spring chicken
2 stalks scallion
1 bulb garlic
2 tbsp five spice powder
2 tbsp dried shallots
4 tbsp light soy sauce
4 dark soy sauce
2 tbsp Chinese Shaoxing wine/ rose wine
Rock sugar to taste
3 bowls water
Method

Mix all ingredients, except the chicken in a pot and boil the sauce. Add the chicken and bring the sauce to boil. Lower heat and simmer over low heat for an hour, turning chicken once or twice to get even browning.
Remove chicken to platter, draining sauce back into pot. Add hardboiled egg to sauce if desired.
Serve chicken with rice or noodles.
