Kong Bak - Stewed Pork 焢肉

Ingredients
600g pork belly, cut into inch-thick slices
10 cloves garlic
4 tbsp dark soya sauce
4 tbsp light soy sauce
2 tbsp brown sugar
2 tbsp Chinese five spice powder
3 hard-boiled eggs

Method
Cut the pork belly into inch-thick slices. Blanch the pork slices in a pot of boiling water for 2 minutes. Rinse under cold running water. This helps to remove the odour from the meat.

Put pork slices in a pot, add garlic, water and all seasoning. The water should just cover the pork slices. Once the water boils, cover with lid and simmer over low heat for 1 hour till the braised meat is tender.

Add the hardboiled eggs just before you serve to prevent the eggs from overcooking.

Best serve with rice or porridge.
