Luo Han Guo and Snow fungus Dessert 罗汉果银耳龙眼红枣汤


Ingredients
2 Luo han guo, removed shell
Half bowl dried longan, soaked
1 large piece snow fungus, soaked
5-6 red dates, stoned
1.5l water

Method
Soak snow fungus in water for 30 minutes till soft. Change the water several times. Trim and discard the hard yellow ends, tear snow fungus into smaller pieces. Soak dried longan in water for 5 minutes to remove dirt and impurities. Rinse red dates.

Bring 1.5 litre water to boil and add all ingredients . Cook covered, over low heat for about 45 minutes.

Serve either hot or chilled.

Note
Luo Han Guo is a natural sweetener so there is no need to add any rock sugar, unless you like it really sweet.

Luo Han Guo can be used for respiratory ailments, sore throats and reputed to aid longevity (Wikipedia). Just found that out!

Since I have all the ingredients except Luo Han Guo, I will make this dessert this afternoon with rock sugar instead. Really have to find LHG the next time I am at the store, now that I know it can used as medicine.

LHG can be found in most of the Asian groceries stores here in Sydney. Our chinatown sells more Asian groceries than the supermarkets back home.

Oh yah, I put LHG in the watercress soup as well. Check out the recipe in the soup category. :)

Thanks Mel. I just went to your watercress soup recipe. Saw Luo Han Guo. It looks a little like "Pei Tan", thousand year old egg, from the outer appearance. Of course, the taste is entirely different. :)

Now, I know what to look for in the stores.
