Stewed Pork Ribs with Mushrooms 冬菇焖排骨
Ingredients
400g pork ribs
5-6 pieces dried mushrooms,pre-soaked, removed stems and cut into halves
2-3 stalks scallions, cut lengthwise into 2-inch sections
5-6 cloves garlic, whole
1 piece ginger, sliced
1 1/2 tbsp dark soy sauce
1 tbsp sweet soy sauce
1 tbsp rice wine
Water
Method
Scald pork ribs in boiling water for a minute to remove scums and excess fats. Drained and set aside.
Heat oil in a saucepan and saute scallion, ginger and garlic till fragrant. Add pork ribs, mushrooms, and all seasoning (except rice wine). Pour just enough water to cover the pork ribs. Stir and mix all ingredients well. Simmer for at least an hour till meat is tender. Add rice wine just before serving.
Dish and serve with rice.
