Szechuan Green Beans with Minced Pork 干煸四季豆


Ingredients
200g green beans, trimmed both ends
80g minced pork
Handful dried shrimps, soaked & coarsely chopped
2 cloves garlic, finely chopped
1 tbsp spicy bean paste
1 tbsp rice wine
1/2 tsp sugar
Cooking oil
1/2 tsp sesame oil
Water


Method
Heat oil in wok over high heat. Deep-fry beans until tender-crisp and slightly wrinkled, about 5 to 8 minutes. Transfer beans to paper towels and drain.

Saute garlic and dried shrimps until fragrant. Add minced pork and stir-fry pork till slightly cooked. Return the beans, add remaining ingredients, swirl and cook for another 3 minutes.

Dish and serve.
